Banana & Chocolate Bread

Huge welcome back to my niece,Catherine Kidd. Catherine is a dietician and also author of her own fantastic blog Knowing Your Onions. Today she is tempting us with a delicious  Banana and Chocolate bread ( as if I need tempting with any sort of cake)  and one which even the most timid of cake-bakers will be able to master in no time AND it’s more healthy than the average bake – so that’s two slices for me then !  You can find more of Catherine’s wonderful recipes by following her on Twitter, Instagram and Facebook

This really is the easiest baking recipe – minimal effort, maximum chocolate. Unlike many other recipes it is low in sugar and replaces the normal butter with peanut butter. This means the saturated (bad) fat from the butter is replaced with unsaturated (good) fat from the peanut butter. It also means the recipe is higher in protein than normal banana bread, provided by the peanuts. It is not exactly health food, but everything in moderation!

INGREDIENTS: 

Ingredients

 

  • 3 bananas, mashed
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla essence
  • 2 eggs, beaten
  • 150g dark chocolate, chopped into small chunks
  • 1/4 cup soft brown sugar
  • 1 cup self raising flour
  • 1/2 cup smooth peanut butter
  • 1/2 cup semi skimmed milk

 

 

Directions

  1. Heat the oven to 180 degrees C
  2. Mix all ingredients together
  3. Bake for 45 minutes, until the loaf is golden brown and you can skewer it and the skewer comes out without any cake batter sticking to it (note: it will probably have some melted chocolate attached!)
  4. Tuck in – best when warm!
